These heart-warming treats help celebrate good health and great food with friends!
Ingredients
1 tablespoon active dry yeast
2 tablespoons lukewarm water
5 cups unbleached flour (or 4 cups unbleached and 1 cup whole-wheat)
¼ cup sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup shortening such as Crisco
2 cups buttermilk
Melted butter for tops of biscuits, if desired
Preparation 1. Preheat to 400°F. Dissolve yeast in warm water and set aside.
2. Combine the flour, sugar, baking powder, soda and salt in a large bowl. With a pastry cutter, cut in the shortening. Add the buttermilk and yeast mixture. Use a wooden spoon to mix well. Turn onto a floured board and knead gently about 10 times. Place dough in a large bowl, cover tightly with plastic wrap and refrigerate overnight.
3. When you’re ready to make biscuits, roll the dough to about ½-inch thick and cut with angel or biscuit cutter. Place the biscuits on an un-greased cookie sheet. Brush tops with melted butter. Bake for 12 to 15 minutes.
Yields about 24 biscuits
