Every few years, a depletion of oxygen in Mobile Bay causes bottom-dwelling fish and crustaceans to swarm toward its shallow shores. The water churns with crab, shrimp, stingrays, eel and flounder. Jubilee is unpredictable, occurring only during summer pre-dawn hours.
