Hearty, Healthy Breakfast Granola

A tasty, filling breakfast for the Sunday morning rush!

Ellen and I enjoyed the challenges of running our new inn.

Six days a week we served a full country breakfast, but when Sunday rolled around we were left scrambling to get to church on time.

We needed a tasty but fast alternative: Enter the White Fence Inn Hearty, Healthy Breakfast Granola. Guests love it! Try this crunchy cereal with milk, on top of yogurt or with fresh fruit.
Ingredients2 tablespoons oil

½ cup honey

1 teaspoon vanilla

3 cups rolled oats

¾ cup wheat germ

1 cup coconut

1 cup chopped walnuts

½ cup bran

2 tablespoons cinnamon
Preparation1. Mix oil, honey and vanilla in large bowl. Mix oats, wheat germ, coconut, chopped walnuts, bran and cinnamon in separate bowl. Combine wet and dry ingredients until well mixed.

2. Spread granola evenly in 9x13 pan.Bake in 325°F oven, stirring every 15 minutes to keep granola from clumping together.

3. Cook for about 35 minutes or until golden brown. Store in air-tight container. Makes about 6 cups.
