Subway has been a lifesaver for me in these healthy-eating challenges. Whenever I am traveling I keep constantly on the lookout for Subway so I can grab a six-inch turkey or ham sub. If I find myself in a burger place, I look for grilled chicken offerings, and even if I do have a burger I try to keep it to a "single" and skip the fries. Or even add a salad -- I like that you can choose a salad instead of fries at Wendy's, for example. Gotta go easy on the dressing, though.
As far as eating in mini marts, that can be more difficult, but it is nice that many of them now offer "real" food in addition to the packaged goodies. When we are planning a trip I will often try to pack a small cooler with some sandwiches and water, and sometimes some of those string cheese sticks, so we won't have to be tempted into unhealthy choices.
While on vacation, we try never to get into a situation where we have to eat every meal "out" -- I always find out if there's a mini-fridge and microwave in the hotel room and if there is we do a little grocery shopping upon arrival so that we have stuff for sandwiches and a few snacks.
Our biggest temptation is the sodas and snacks at every stop to fill up with gas. The best way to avoid this that we have found is to keep a dry box and a cooler stocked at grocery stores with healthier choices and to eat before going to the station for gas. Also adding 5 minutes of walking at each rest stop helps with stiffness and staying in shape and makes no noticeable impact on the length of the trip.
